It takes a skillful hand to honor great ham. I learned my trade working in a small family restaurant in Huelva. I was put in charge of slicing the ham that was served to our customers. Knife-slicing dry-cured ham is not so easy, as I realized every time I stood before a new ham.
I love challenge, so every ham became a unique learning experience for me. The better I got at it, so, too, grew my dreams of going further in the world. That’s what first took me to America. In 2006 I accepted a contract from an American company that traded in foods from Spain. After two years working in the import department, I jumped at the opportunity offered by Jamones Fermín, Spanish ham producers, to get back to what I like best—hand-slicing hams by knife. For me, this is where the pleasure of Spanish ham begins, with that first cut, the essential first step to enjoying a top-quality ham.
At my first-ever event in the US, I had the privilege of presenting a workshop and tasting of Spanish ham at the Worlds of Flavor Conference of the Culinary Institute of America in Napa Valley, California, attended by some of the world’s top chefs. Observing their intense interest and real pleasure in Spanish ham, I became convinced that I had to get back to working that culinary craft, paying homage to one of the world’s gastonomic treasures—Ibérico ham.
When acclaimed Chef José Andrés, who has restaurants in Washington, DC, Los Angeles and Las Vegas, asked me to work with him in promoting Ibérico ham in the US, I jumped at the chance. I became a specialist, working as a master ham slicer in the US. I discovered that there were no professional ham cutters in the United States and very few people specialized in products from Spain who were willing to share their knowledge with customers on a daily basis and few who were actively promoting Spanish products across the US. I come from Huelva, a province in southwestern Spain. Being Spanish, it gives me great pride to be the link bringing one of the most exclusive foods in the world to your guests and clients. I am now professionally dedicated to Spanish ham—as a ham slicer for official events, parties and culinary fairs and in providing selected hams for sale on my online shop. Mi aventura americana fue venir con un contrato de una compañía pero lamentablemente esta cerró despues de dos años, las cosas fueron muy difíciles y pensando en volver a ESPAÑA, en el 2009 EEUU abre las puertas de importar jamón ibérico, me invitaron a un congreso en NAPA VALLEY CA, donde tuve la suerte de demostrar el corte de jamón, muchos chefs no sabían cortar jamón profesionalmente, en esos momentos pensé en que esta profesión seria nueva en este país, por lo tanto me empecé hacer lo que antes en España sabía hacer , cortar jamón, desde entonces no he parado de ir a los mejores eventos en EEUU.
